Kefir is a fermented milk product that originated in Europe.  Kefir contains beneficial live bacteria that can colonize the intestinal tract and beneficial yeasts that dominate, control and eliminate destructive yeasts in the body.
Kefir is a rich source of many different vitamins, minerals and essential amino acids that promote healing and repair, as well as general health maintenance. Kefir contains high levels of thiamin, B12, calcium, folates and Vitamin K2. It is a good source of biotin, a B vitamin that helps the body assimilates other B vitamins.
The small curd size of kefir makes it easy to digest and it also contains lactase, the enzyme needed to digest lactose as well as many vitamins and minerals including calcium, phosphorus, magnesium, Vitamin B2 and B12, vitamin K, vitamin A and vitamin D. It also contains Tryptophan, and essential amino acid known for it's relaxing effect on the nervous system.
Cysteine is a non-denatured amino acid found in raw whey, which is the optimal component for the intracellular production of Glutathione by the liver. Glutathione is known as the body's master antioxidant and detoxifier. However, pasteurization denatures Cysteine into Cystine, the latter of which is eleven times less effective as a precursor to Glutathione production by the liver.

How to make Milk Kefir - (images will be here soon)

Step 1 - Place the Milk Kefir Grains into a glass jar.

Step 2 - Add 1 cup of milk.

Step 3 - Cover with a cloth, paper towel or other material that will allow it to breathe.

Step 4 - Leave for 12-24 hours depending on how you like your kefir. (This is a personal choice). Stir a couple of times. Temperature changes will affect the fermentation time.  You won’t kill the kefir, so don’t worry if you get it wrong.  Just adjust the fermentation time for the next batch. Experiment until you get it to the consistency and taste that you like.

Step 5 - Strain the milk with the kefir grains through a plastic sieve. The liquid that is strained off can be placed in the fridge or consumed straight away.

Step 6 - The kefir grains that are left in the sieve can be placed into a glass jar and you can start again from step one.
